Ingredients:

  • 1 medium head cauliflower (about 700g / 1.5 lbs), cut into florets
  • 1 large egg, lightly beaten
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pizza sauce (as desired)
  • Shredded mozzarella cheese (as desired)
  • Toppings of your choice (pepperoni, veggies, etc.)

Instructions:

  1. Cut cauliflower into florets.
  2. Process cauliflower florets in a food processor until they resemble rice.
  3. Microwave the cauliflower rice until softened.
  4. Transfer the cooked cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This is key!
  5. In a bowl, combine the squeezed cauliflower with egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper.
  6. Press the mixture onto a parchment-lined baking sheet into a round pizza crust shape.
  7. Bake the crust until golden brown and slightly firm.
  8. Add pizza sauce, cheese, and your desired toppings.
  9. Bake again until the cheese is melted and bubbly, and the toppings are heated through.
  10. Let cool slightly before slicing and serving the cauliflower pizza crust.
