Ingredients:
- 1 medium head cauliflower (about 700g / 1.5 lbs), cut into florets
- 1 large egg, lightly beaten
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pizza sauce (as desired)
- Shredded mozzarella cheese (as desired)
- Toppings of your choice (pepperoni, veggies, etc.)
Instructions:
- Cut cauliflower into florets.
- Process cauliflower florets in a food processor until they resemble rice.
- Microwave the cauliflower rice until softened.
- Transfer the cooked cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This is key!
- In a bowl, combine the squeezed cauliflower with egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper.
- Press the mixture onto a parchment-lined baking sheet into a round pizza crust shape.
- Bake the crust until golden brown and slightly firm.
- Add pizza sauce, cheese, and your desired toppings.
- Bake again until the cheese is melted and bubbly, and the toppings are heated through.
- Let cool slightly before slicing and serving the cauliflower pizza crust.
