Ingredients:

  • 1 pound (450g) ripe tomatoes, sliced about ¼ inch thick
  • 8 ounces (225g) fresh mozzarella, sliced about ¼ inch thick
  • 2 ripe avocados, pitted, peeled, and sliced
  • 4 ounces (115g) Toma cheese, sliced or crumbled
  • ½ cup (120ml) prepared basil pesto
  • ¼ cup (60ml) balsamic glaze
  • Fresh basil leaves, for garnish
  • Extra virgin olive oil, for drizzling
  • Sea salt and freshly ground black pepper, to taste

Instructions:

  1. Slice the tomatoes and arrange them on a serving platter or individual plates.
  2. Layer the mozzarella slices between the tomato slices.
  3. Tuck avocado slices amongst the tomatoes and mozzarella.
  4. Distribute the Toma cheese evenly over the salad.
  5. Drizzle the pesto and balsamic glaze over the salad. Garnish with fresh basil leaves.
  6. Drizzle with olive oil, season with salt and pepper to taste, and serve immediately.
