Ingredients:

  • 2 cups shredded cooked chicken
  • ½ cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 medium zucchinis
  • Olive oil, for brushing
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis in half lengthwise and scoop out the centers using a spoon.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Brush zucchini boats with olive oil and place them cut side up on a baking sheet. Spoon the buffalo chicken mixture into each zucchini boat.
  5. Bake in preheated oven for 25 minutes or until the zucchini is tender and the cheese is bubbly.
  6. Remove from the oven, let cool slightly, garnish with parsley if desired, and enjoy!
