Ingredients:
- 2 cups shredded cooked chicken
- ½ cup buffalo sauce
- 1 cup shredded cheddar cheese
- 2 tablespoons cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 4 medium zucchinis
- Olive oil, for brushing
- Fresh parsley, for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis in half lengthwise and scoop out the centers using a spoon.
- In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well.
- Brush zucchini boats with olive oil and place them cut side up on a baking sheet. Spoon the buffalo chicken mixture into each zucchini boat.
- Bake in preheated oven for 25 minutes or until the zucchini is tender and the cheese is bubbly.
- Remove from the oven, let cool slightly, garnish with parsley if desired, and enjoy!
