- 1 pound (450g) Italian sausage (mild or spicy)
- 2 tablespoons (30ml) olive oil
- 1 large onion, thinly sliced
- 2 bell peppers (any color), sliced into strips
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 1 teaspoon dried oregano (or Italian seasoning)
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Crusty bread or hoagie rolls (optional)
Instructions:
- Prep the ingredients: Slice the onions and bell peppers, and mince the garlic.
- Cook the sausage: In a large skillet, heat olive oil over medium heat. Add the sausages and cook until browned on all sides (about 5-7 minutes). Remove and set aside.
- Sauté the vegetables: In the same skillet, add sliced onions and bell peppers. Cook for about 5-7 minutes, stirring occasionally, until softened. Add minced garlic, oregano, salt, pepper, and red pepper flakes. Cook for another 2-3 minutes.
- Combine and simmer: Slice the cooked sausage and return it to the skillet. Stir to combine. Reduce heat and let everything simmer together for 5 minutes, allowing the flavors to meld.
- Serve: Garnish with fresh parsley and serve hot with crusty bread or hoagie rolls.
