Ingredients:
- 1 cup (160g) dry soybeans, soaked overnight
- 2 cups (480ml) water (for blending)
- 1 tablespoon (15ml) olive oil (optional)
- 1 teaspoon (5g) salt, more to taste
- 1 tablespoon (15ml) lemon juice (or apple cider vinegar)
- 1 clove garlic, minced (optional)
- Fresh herbs (like basil or cilantro) for garnish (optional)
Instructions:
- Place dry soybeans in a bowl and cover with water. Soak overnight or for at least 8 hours.
- After soaking, drain and rinse the soybeans under cold water.
- In a high-speed blender or food processor, combine the soaked soybeans, 2 cups of fresh water, olive oil, salt, lemon juice, and garlic (if using).
- Blend on high speed until smooth and creamy, approximately 2-3 minutes. Stop to scrape down the sides if necessary.
- If too thick, gradually add more water, blending until the desired creamy consistency is reached.
- Taste the blend and adjust seasoning with more salt or lemon juice as needed.
- Transfer to a serving bowl and garnish with fresh herbs if desired. Enjoy!
