Ingredients:

  • 1 cup (160g) dry soybeans, soaked overnight
  • 2 cups (480ml) water (for blending)
  • 1 tablespoon (15ml) olive oil (optional)
  • 1 teaspoon (5g) salt, more to taste
  • 1 tablespoon (15ml) lemon juice (or apple cider vinegar)
  • 1 clove garlic, minced (optional)
  • Fresh herbs (like basil or cilantro) for garnish (optional)

Instructions:

  1. Place dry soybeans in a bowl and cover with water. Soak overnight or for at least 8 hours.
  2. After soaking, drain and rinse the soybeans under cold water.
  3. In a high-speed blender or food processor, combine the soaked soybeans, 2 cups of fresh water, olive oil, salt, lemon juice, and garlic (if using).
  4. Blend on high speed until smooth and creamy, approximately 2-3 minutes. Stop to scrape down the sides if necessary.
  5. If too thick, gradually add more water, blending until the desired creamy consistency is reached.
  6. Taste the blend and adjust seasoning with more salt or lemon juice as needed.
  7. Transfer to a serving bowl and garnish with fresh herbs if desired. Enjoy!
