Ingredients:

  • 1 lb fresh broccoli, cut into bite-sized florets
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp garlic powder

Instructions:

  1. Preheat oven to 400°F (200°C). Wash and dry broccoli thoroughly. Note: Use a clean kitchen towel to get it bone dry.
  2. Cut the head into uniform, 1 inch bite-sized florets. Slice the inner core of the stems into rounds of the same size.
  3. Place florets and stem rounds in a large bowl.
  4. Toss with 2 tbsp olive oil, 1/2 tsp kosher salt, 1/4 tsp cracked black pepper, and 1/2 tsp garlic powder. until every piece glitters with oil.
  5. Spread the mixture in a single layer on a large rimmed baking sheet. Note: Leave space between pieces for airflow.
  6. Roast for 18–20 minutes. until the edges are dark brown and the florets smell toasted.
  7. Remove from oven immediately to stop the cooking process.
