Ingredients:
- 3 ripe Hass avocados (approx. 1 lb / 450g)
- 1 lime, juiced (approx. 2 tbsp / 30ml)
- ½ cup (50g) red onion, finely diced
- ¼ cup (15g) fresh cilantro, chopped
- 1 jalapeño pepper (10g), minced
- 1 roma tomato (60g), seeded and diced
- ½ tsp (3g) sea salt
- ⅛ tsp (0.5g) ground black pepper
Instructions:
- Dice the onion, tomato, and jalapeño. Chop the cilantro. Seed the tomato first to prevent the Best EVER Guacamole from becoming too watery. Juice the lime into a small bowl.
- Halve the avocados and remove the pits. Scoop the flesh into a mixing bowl.
- Use a fork or whisk to mash the avocado. Stop until it's creamy but still contains small, visible chunks.
- Add the diced onion, jalapeño, and tomato to the bowl.
- Pour in the lime juice and sprinkle with salt and pepper.
- Use a folding motion to incorporate the ingredients. Note: Don't stir vigorously or you'll crush the tomatoes.
- Fold in the chopped cilantro last. This keeps the leaves bright green.
- Taste the mixture. Add an extra pinch of salt if the flavor feels flat.
- Serve immediately with salted corn chips.
