Ingredients:
- 1 lb lean ground beef (90/10)
- 1.5 lbs sweet potatoes, peeled and diced
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 2 tbsp avocado oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Dice the sweet potatoes into uniform 1/2-inch cubes. Chop the onion and bell pepper to a similar size to ensure consistent cooking.
- Heat the avocado oil in a 12-inch skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook until browned and edges are crisp.
- Stir in the diced onions and bell peppers, sautéing for 3-5 minutes until the onions turn translucent.
- Stir in the diced sweet potatoes and the seasoning blend (garlic powder, smoked paprika, salt, pepper, and cayenne). Toss thoroughly to coat in the beef fat.
- Lower the heat to medium and cover with a lid for 5-7 minutes to steam-soften the potatoes.
- Uncover and sauté for another 5-8 minutes until the potatoes are tender and have developed a deep golden-brown crust.
