Ingredients:

  • 60ml (2 oz) Quality London Dry Gin
  • 22.5ml (0.75 oz) Freshly Squeezed Lemon Juice
  • 22.5ml (0.75 oz) 1:1 Honey Syrup
  • 60ml (2 oz) Wildflower or Clover Honey
  • 60ml (2 oz) Filtered Water
  • 1 Fresh Lemon Twist
  • Ice (large, clear cubes)

Instructions:

  1. Prepare the Honey Syrup: In a small saucepan over low heat, combine 60ml honey and 60ml water. Stir constantly until the honey is fully dissolved into the water. Do not let it boil. Remove from heat and let it cool completely.
  2. Build the cocktail: Add 60ml gin, 22.5ml fresh lemon juice, and 22.5ml of the prepared chilled honey syrup into your cocktail shaker.
  3. Emulsify: Fill the shaker to the brim with ice. Seal tightly and shake vigorously for 12 seconds until the shaker is painfully cold and frost develops on the exterior.
  4. Double Strain: Pour the mixture through a Hawthorne strainer and a fine-mesh sieve into a chilled coupe or martini glass to remove ice shards and pulp.
  5. Garnish: Express the oils from a fresh lemon twist over the surface of the drink and drop the twist into the glass.
