Ingredients:
- 3 large overripe bananas, mashed (approx. 1 cup / 225g)
- 1/2 cup unsalted butter, melted and cooled (113g)
- 3/4 cup light brown sugar, packed (150g)
- 1 large egg, room temperature
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 cup semi-sweet chocolate chips (170g)
Instructions:
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mash the bananas in a small bowl until mostly smooth.
- In a large bowl, whisk together the melted butter and brown sugar until combined.
- Beat in the egg and vanilla extract until the mixture looks glossy, then stir in the mashed bananas until fully integrated.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Pour the dry ingredients into the wet ingredients and use a rubber spatula to gently fold the mixture until no streaks of flour remain.
- Gently fold in 3/4 cup of the chocolate chips.
- Divide the batter evenly among the 12 liners, filling them nearly to the top.
- Press the remaining 1/4 cup of chocolate chips onto the tops of the muffins.
- Bake for 18–22 minutes until the tops are mahogany-brown and a toothpick inserted into the center comes out clean.
