Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup / 225g)
  • 1/2 cup unsalted butter, melted and cooled (113g)
  • 3/4 cup light brown sugar, packed (150g)
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 cup semi-sweet chocolate chips (170g)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Mash the bananas in a small bowl until mostly smooth.
  3. In a large bowl, whisk together the melted butter and brown sugar until combined.
  4. Beat in the egg and vanilla extract until the mixture looks glossy, then stir in the mashed bananas until fully integrated.
  5. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  6. Pour the dry ingredients into the wet ingredients and use a rubber spatula to gently fold the mixture until no streaks of flour remain.
  7. Gently fold in 3/4 cup of the chocolate chips.
  8. Divide the batter evenly among the 12 liners, filling them nearly to the top.
  9. Press the remaining 1/4 cup of chocolate chips onto the tops of the muffins.
  10. Bake for 18–22 minutes until the tops are mahogany-brown and a toothpick inserted into the center comes out clean.
