Ingredients:

  • 1 large head of green cabbage (about 2-3 lbs/ 900g-1.3kg)
  • 3 tablespoons olive oil (45ml)
  • 1/4 teaspoon sea salt (1.5g)
  • 1/4 teaspoon black pepper (1.5g)
  • 2 tablespoons balsamic vinegar (30ml)
  • 1 tablespoon honey (15ml)
  • 1 clove garlic, minced (about 1 teaspoon)
  • Optional: fresh parsley, chopped, for garnish
  • Optional: Red pepper flakes, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Remove outer leaves of the cabbage if they are wilted or damaged. Cut the cabbage through the core into approximately 1-inch (2.5cm) thick steaks.
  3. Place cabbage steaks on the baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast for 15 minutes. Flip the cabbage steaks and roast for another 15-20 minutes, or until tender and slightly browned.
  5. While the cabbage roasts, whisk together balsamic vinegar, honey, and minced garlic in a small bowl.
  6. During the last 5-7 minutes of cooking, drizzle the balsamic honey glaze over the cabbage steaks. Roast until the glaze is sticky and caramelized. Watch carefully to prevent burning.
  7. Remove from oven. Garnish with fresh parsley and red pepper flakes (if using). Serve immediately.
