Ingredients:
- 1 large head of green cabbage (about 2-3 lbs/ 900g-1.3kg)
- 3 tablespoons olive oil (45ml)
- 1/4 teaspoon sea salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
- 2 tablespoons balsamic vinegar (30ml)
- 1 tablespoon honey (15ml)
- 1 clove garlic, minced (about 1 teaspoon)
- Optional: fresh parsley, chopped, for garnish
- Optional: Red pepper flakes, for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- Remove outer leaves of the cabbage if they are wilted or damaged. Cut the cabbage through the core into approximately 1-inch (2.5cm) thick steaks.
- Place cabbage steaks on the baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
- Roast for 15 minutes. Flip the cabbage steaks and roast for another 15-20 minutes, or until tender and slightly browned.
- While the cabbage roasts, whisk together balsamic vinegar, honey, and minced garlic in a small bowl.
- During the last 5-7 minutes of cooking, drizzle the balsamic honey glaze over the cabbage steaks. Roast until the glaze is sticky and caramelized. Watch carefully to prevent burning.
- Remove from oven. Garnish with fresh parsley and red pepper flakes (if using). Serve immediately.
