Ingredients:
- 2 cups (180g) Old-fashioned rolled oats
- 1 tsp (5g) Baking powder
- 1 tsp (2g) Ground cinnamon
- 1/4 tsp (1.5g) Salt
- 1 cup (240ml) Whole milk
- 1 large Egg
- 1/4 cup (60ml) Pure maple syrup
- 1 tsp (5ml) Vanilla extract
- 2 tbsp (28g) Melted unsalted butter
- 1 1/2 cups (225g) Fresh blueberries
Instructions:
- Preheat your oven to 350°F (175°C). Grease your baking dish or line it with parchment paper.
- In a large bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until the spices are evenly distributed.
- To the same bowl, add the milk, egg, maple syrup, vanilla, and melted butter. Stir with a spatula until the oats are fully submerged and the mixture is cohesive.
- Let the mixture sit for 5 minutes to allow the oats to hydrate.
- Gently fold in the blueberries, being careful not to over-mix.
- Pour the mixture into the prepared dish and smooth the top.
- Bake for 35–40 minutes until the edges are mahogany-colored and the center is set with a slight spring-back touch.
