  • 1 tablespoon (15g) sugar
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon (5g) salt
  • 1 cup (120g) shredded vegan cheddar cheese
  • ½ cup (75g) diced fresh jalapeños
  • 2 tablespoons (30ml) nutritional yeast (optional, for extra cheesiness)

Instructions:

  1. In a bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes until foamy.
  2. In a large bowl, whisk together flour and salt.
  3. Pour yeast mixture and olive oil into the dry ingredients. Mix until a dough forms.
  4. Turn dough onto a floured surface and knead for about 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for 30-45 minutes or until doubled in size.
  6. In a bowl, combine shredded vegan cheddar, diced jalapeños, and nutritional yeast.
  7. Punch down the risen dough, then roll it out on a floured surface. Add the filling and roll into a tight loaf.
  8. Place the shaped loaf in a greased loaf pan or on a baking sheet. Cover and let rise for another 20-30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake for 30-35 minutes until golden brown and hollow sounding when tapped on the bottom.
