Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup ube puree (fresh or canned)
  • 1 cup coconut milk
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press mixture firmly into the bottom and sides of the pie dish.
  4. Bake crust for 10 minutes; remove from oven and let cool.
  5. In a medium bowl, whisk together ube puree, coconut milk, and sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Sift in cornstarch, add vanilla extract, and a pinch of salt; mix until combined.
  8. Pour ube filling into the prepared graham cracker crust.
  9. Bake for 25-30 minutes until the center is set but slightly jiggly.
  10. Remove from the oven and let cool at room temperature, then refrigerate for at least 1 hour before serving.
