Ingredients:
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 cup ube puree (fresh or canned)
- 1 cup coconut milk
- ¾ cup granulated sugar
- 3 large eggs
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press mixture firmly into the bottom and sides of the pie dish.
- Bake crust for 10 minutes; remove from oven and let cool.
- In a medium bowl, whisk together ube puree, coconut milk, and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Sift in cornstarch, add vanilla extract, and a pinch of salt; mix until combined.
- Pour ube filling into the prepared graham cracker crust.
- Bake for 25-30 minutes until the center is set but slightly jiggly.
- Remove from the oven and let cool at room temperature, then refrigerate for at least 1 hour before serving.
