Ingredients:

  • 4 cups (500g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon salt
  • 1 cup (240ml) whole milk, warmed
  • 1/4 cup (60ml) ube extract
  • 1/4 cup (60g) unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon (15g) additional granulated sugar (for topping)
  • 1 egg (for egg wash)

Instructions:

  1. In a large mixing bowl, combine flour, sugar, yeast, and salt.
  2. In a separate bowl, whisk together warmed milk, ube extract, eggs, and softened butter.
  3. Gradually add wet ingredients to the dry ingredients, mixing until combined.
  4. Knead the dough for about 10-15 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.
  6. Punch down the dough, transfer to a floured surface, and divide into two equal pieces.
  7. Shape each piece into a loaf, tucking in the ends to create a smooth surface.
  8. Place the shaped loaves into the prepared baking pan. Cover and let rise for another 30 minutes.
  9. Preheat the oven to 350°F (175°C).
  10. Whisk the additional egg and brush the tops of the loaves.
  11. Bake for 25-30 minutes or until the tops are golden brown and the internal temperature reaches 200°F (93°C).
  12. Allow the bread to cool in the pan for 5 minutes before transferring it to a wire rack. Slice and enjoy!
