Ingredients:
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 2 cups (240 g) all-purpose flour
- ½ cup (60 g) cornstarch
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup (75 g) fresh strawberries, finely chopped
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the finely chopped strawberries.
- Chill the dough in the refrigerator for 30 minutes.
- Roll out the chilled dough on a floured surface to about ½-inch thickness.
- Cut into desired shapes using cookie cutters and place on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on a wire rack; dust with powdered sugar if desired.
