Ingredients:

  • 1 cup (225 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 cups (240 g) all-purpose flour
  • ½ cup (60 g) cornstarch
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup (75 g) fresh strawberries, finely chopped
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the finely chopped strawberries.
  7. Chill the dough in the refrigerator for 30 minutes.
  8. Roll out the chilled dough on a floured surface to about ½-inch thickness.
  9. Cut into desired shapes using cookie cutters and place on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  11. Allow cookies to cool on a wire rack; dust with powdered sugar if desired.
