Ingredients:

  • 4 salmon fillets (approximately 6 oz each, skin-on recommended)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • 1 cup (120 g) hazelnuts, finely chopped
  • 1/2 cup (50 g) breadcrumbs (preferably panko)
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter, melted (30 g)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chopped hazelnuts, breadcrumbs, parsley, lemon zest, and melted butter. Mix until well combined.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
  4. Press the hazelnut mixture evenly atop each salmon fillet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F/63°C).
  6. Remove from the oven and allow to rest for a few minutes before serving. Enjoy!
