Ingredients:
- 4 salmon fillets (approximately 6 oz each, skin-on recommended)
- 1 tablespoon olive oil (15 ml)
- Salt and pepper to taste
- 1 cup (120 g) hazelnuts, finely chopped
- 1/2 cup (50 g) breadcrumbs (preferably panko)
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter, melted (30 g)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine chopped hazelnuts, breadcrumbs, parsley, lemon zest, and melted butter. Mix until well combined.
- Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Press the hazelnut mixture evenly atop each salmon fillet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F/63°C).
- Remove from the oven and allow to rest for a few minutes before serving. Enjoy!
