Ingredients:

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup (120ml) buttermilk (or sour milk)
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) milk
  • 1/2 teaspoon pure vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease the mini donut pan with non-stick spray.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix.
  6. Transfer the batter into the prepared mini donut pan, filling each cavity about 3/4 full.
  7. Bake for 8-10 minutes, or until the donuts are lightly golden and a toothpick comes out clean.
  8. Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack.
  9. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  10. Once the donuts are cool, dip the tops into the glaze and allow excess to drip off. Place back on the wire rack to set.
