Ingredients:
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon pure vanilla extract
- 1/2 cup (120ml) buttermilk (or sour milk)
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1 cup (120g) powdered sugar
- 2 tablespoons (30ml) milk
- 1/2 teaspoon pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Lightly grease the mini donut pan with non-stick spray.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix.
- Transfer the batter into the prepared mini donut pan, filling each cavity about 3/4 full.
- Bake for 8-10 minutes, or until the donuts are lightly golden and a toothpick comes out clean.
- Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Once the donuts are cool, dip the tops into the glaze and allow excess to drip off. Place back on the wire rack to set.
