Ingredients:

  • 3 cups (360g) all-purpose flour
  • 1/2 cup (60g) matcha powder
  • 1/3 cup (80ml) vegetable oil
  • 1 cup (120g) powdered sugar
  • 1/2 cup (120ml) water
  • 1/4 teaspoon salt
  • 2 cups (400g) sweetened red bean paste
  • 1 tablespoon (15g) sesame oil

Instructions:

  1. Sift together flour, matcha powder, and salt in a bowl.
  2. In another bowl, mix vegetable oil, powdered sugar, and water until smooth.
  3. Gradually combine wet and dry ingredients, forming a dough.
  4. Divide into 12 equal pieces, wrap, and chill for 1 hour.
  5. In a bowl, mix red bean paste with sesame oil until well combined.
  6. Divide the filling into 12 equal balls.
  7. Preheat the oven to 350°F (175°C).
  8. Take a piece of chilled dough and flatten it into a disc.
  9. Place a ball of filling in the center and wrap the dough around it.
  10. Mold the mooncakes using a mooncake mold or cookie cutter to create designs.
  11. Arrange mooncakes on a parchment-lined baking sheet.
  12. Bake for 20-25 minutes, or until the tops are lightly golden.
  13. Cool on a wire rack before serving.
