- 1 cup (120g) low-fat cream cheese (for frosting)
- ½ cup (60g) powdered sugar (or sugar substitute)
- 1 tsp vanilla extract (for frosting)
Instructions:
- Preheat oven to 350°F (175°C).
- Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, beat together the sugar, applesauce, eggs, almond milk, and vanilla extract until smooth.
- Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
- Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Frost the cooled cake as desired.
