Ingredients:

  • 1 ½ cups (150g) almond flour
  • ½ cup (60g) all-purpose flour or gluten-free flour
  • ½ cup (120ml) honey or agave syrup
  • 3 large eggs
  • ½ cup (120ml) unsweetened applesauce
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt (optional)
  • Zest of 1 lemon
  • ¼ cup (30g) sliced almonds
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease the cake pan and line the bottom with parchment paper.
  2. In a bowl, combine almond flour, all-purpose flour, baking powder, baking soda, and salt (if using). Whisk together thoroughly.
  3. In a separate mixing bowl, beat the eggs until frothy. Add honey or agave, applesauce, vanilla extract, and lemon zest. Mix until well combined.
  4. Gradually add the dry mixture to the wet ingredients, folding gently with a spatula until just combined.
  5. Pour the batter into the prepared cake pan, smoothing the top. Sprinkle sliced almonds on top.
  6. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
  8. Once cool, dust with powdered sugar if desired. Slice and serve!
