Ingredients:
- 1 ½ cups (150g) almond flour
- ½ cup (60g) all-purpose flour or gluten-free flour
- ½ cup (120ml) honey or agave syrup
- 3 large eggs
- ½ cup (120ml) unsweetened applesauce
- 2 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt (optional)
- Zest of 1 lemon
- ¼ cup (30g) sliced almonds
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease the cake pan and line the bottom with parchment paper.
- In a bowl, combine almond flour, all-purpose flour, baking powder, baking soda, and salt (if using). Whisk together thoroughly.
- In a separate mixing bowl, beat the eggs until frothy. Add honey or agave, applesauce, vanilla extract, and lemon zest. Mix until well combined.
- Gradually add the dry mixture to the wet ingredients, folding gently with a spatula until just combined.
- Pour the batter into the prepared cake pan, smoothing the top. Sprinkle sliced almonds on top.
- Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
- Once cool, dust with powdered sugar if desired. Slice and serve!
