- 2 cups (240g) all-purpose flour
- 1 ½ tsp baking powder

- ½ cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 cup (240ml) plain kefir
- 1 tbsp lemon zest (about 1 lemon)
- 1 tsp vanilla extract
- 1 cup (120g) powdered sugar
- 2-3 tbsp fresh lemon juice (adjust for consistency)
- ½ tsp lemon zest (optional, for garnish)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease and flour the baking sheet or line with parchment paper.
- In a bowl, combine flour, baking powder, baking soda, and salt. Whisk until well combined.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, kefir, lemon zest, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared baking sheet and spread evenly.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the baking sheet for 10 minutes, then transfer to a cooling rack.
- In a bowl, whisk together powdered sugar and lemon juice to desired consistency.
- Drizzle the glaze over the cooled cake and sprinkle with additional lemon zest if desired.
