Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 cup (240ml) plain kefir
  • 1 tbsp lemon zest (about 1 lemon)
  • 1 tsp vanilla extract
  • 1 cup (120g) powdered sugar
  • 2-3 tbsp fresh lemon juice (adjust for consistency)
  • ½ tsp lemon zest (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour the baking sheet or line with parchment paper.
  3. In a bowl, combine flour, baking powder, baking soda, and salt. Whisk until well combined.
  4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs, kefir, lemon zest, and vanilla extract until smooth.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into the prepared baking sheet and spread evenly.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the baking sheet for 10 minutes, then transfer to a cooling rack.
  10. In a bowl, whisk together powdered sugar and lemon juice to desired consistency.
  11. Drizzle the glaze over the cooled cake and sprinkle with additional lemon zest if desired.
