Ingredients:

  • 2 ¾ cups (340g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional granulated sugar for rolling or sprinkles (to taste)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until combined.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract to the butter mixture. Continue to mix until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients. Mix until just combined.
  6. Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
  7. Using a cookie scoop or spoon, portion out the dough and roll into balls. Roll in additional sugar if desired.
  8. Place rounded dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes until lightly golden around the edges.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
