Ingredients:
- 2 ¾ cups (340g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (227g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Additional granulated sugar for rolling or sprinkles (to taste)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, whisk together the flour, baking soda, and salt until combined.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter mixture. Continue to mix until fully incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients. Mix until just combined.
- Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
- Using a cookie scoop or spoon, portion out the dough and roll into balls. Roll in additional sugar if desired.
- Place rounded dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes until lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
