  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water
  • 1 cup (230g) unsalted butter, softened
  • 3 ½ cups (420g) powdered sugar
  • ½ cup (45g) unsweetened cocoa powder
  • ½ teaspoon vanilla extract
  • 2-4 tablespoons (30-60ml) heavy cream

Instructions:

  1. Preheat the Oven: Preheat to 350°F (175°C). Grease and flour the cake pans.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, beat eggs, then add milk, oil, and vanilla. Mix well.
  4. Combine Mixtures: Add the wet ingredients to the dry ingredients and stir until combined.
  5. Add Boiling Water: Carefully stir in the boiling water until the batter is smooth (it will be thin).
  6. Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the Cakes: Allow cakes to cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
  8. Prepare Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar and cocoa, alternating with heavy cream until desired consistency is reached. Mix in vanilla.
  9. Assemble the Cake: Place one cake layer on a serving plate, spread frosting on top, then add the second layer. Frost the top and sides evenly.
