Ingredients:
- 4 cups (960 ml) tropical lime soda
- 2 cups (480 ml) pineapple juice, unsweetened if possible
- 1 cup (240 ml) freshly squeezed lime juice (about 6-8 limes)
- 1/2 cup (120 ml) cold water (optional, to lighten sweetness)
- 1/4 cup (50 g) white granulated sugar (adjust to taste)
- 1 cup (240 ml) ice cubes
- 1/2 cup (10 g) fresh mint leaves, plus extra for garnish
- Lime slices or wedges (for garnish)
- Pineapple chunks (for garnish)
- Fresh mint sprigs (for garnish)
Instructions:
- Juice the limes until you have 1 cup (240 ml) fresh lime juice. Strain to remove seeds if desired. Wash and lightly bruise the mint leaves to release flavor.
- In a large pitcher, mix pineapple juice, lime juice, and white sugar. Stir until the sugar dissolves completely.
- Add tropical lime soda and cold water. Gently stir to combine without losing too much carbonation.
- Toss in the bruised mint leaves and ice cubes. Stir gently to chill the punch and infuse mint flavor.
- Taste the punch and adjust sweetness or acidity by adding more sugar or lime juice if needed.
- Pour into glasses, garnish with lime slices, pineapple chunks, and fresh mint sprigs. Serve immediately for best fizz.
