Ingredients:

  • 4 cups (960 ml) tropical lime soda
  • 2 cups (480 ml) pineapple juice, unsweetened if possible
  • 1 cup (240 ml) freshly squeezed lime juice (about 6-8 limes)
  • 1/2 cup (120 ml) cold water (optional, to lighten sweetness)
  • 1/4 cup (50 g) white granulated sugar (adjust to taste)
  • 1 cup (240 ml) ice cubes
  • 1/2 cup (10 g) fresh mint leaves, plus extra for garnish
  • Lime slices or wedges (for garnish)
  • Pineapple chunks (for garnish)
  • Fresh mint sprigs (for garnish)

Instructions:

  1. Juice the limes until you have 1 cup (240 ml) fresh lime juice. Strain to remove seeds if desired. Wash and lightly bruise the mint leaves to release flavor.
  2. In a large pitcher, mix pineapple juice, lime juice, and white sugar. Stir until the sugar dissolves completely.
  3. Add tropical lime soda and cold water. Gently stir to combine without losing too much carbonation.
  4. Toss in the bruised mint leaves and ice cubes. Stir gently to chill the punch and infuse mint flavor.
  5. Taste the punch and adjust sweetness or acidity by adding more sugar or lime juice if needed.
  6. Pour into glasses, garnish with lime slices, pineapple chunks, and fresh mint sprigs. Serve immediately for best fizz.
