Ingredients:
- 2 ½ cups (300g) super-fine blanched almond flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- ½ tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 3 medium (350g) overripe bananas, mashed
- 2 large (100g) eggs, room temperature
- ¼ cup (60ml) melted coconut oil
- ¼ cup (60ml) maple syrup
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Line a 12-cup standard muffin tin with liners or grease well with coconut oil.
- In a large bowl, mash the bananas until smooth.
- Whisk in the eggs, melted oil, maple syrup, and vanilla until the mixture is emulsified.
- Stir in the almond flour, baking soda, baking powder, salt, and cinnamon.
- Fold with a spatula just until no dry streaks remain; do not overmix.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18-22 minutes, or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to firm up.
