Ingredients:

  • 2 ½ cups (300g) super-fine blanched almond flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) baking powder
  • ½ tsp (3g) sea salt
  • 1 tsp (2g) ground cinnamon
  • 3 medium (350g) overripe bananas, mashed
  • 2 large (100g) eggs, room temperature
  • ¼ cup (60ml) melted coconut oil
  • ¼ cup (60ml) maple syrup
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 12-cup standard muffin tin with liners or grease well with coconut oil.
  2. In a large bowl, mash the bananas until smooth.
  3. Whisk in the eggs, melted oil, maple syrup, and vanilla until the mixture is emulsified.
  4. Stir in the almond flour, baking soda, baking powder, salt, and cinnamon.
  5. Fold with a spatula just until no dry streaks remain; do not overmix.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes, or until the tops are mahogany-colored and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to firm up.
