- 2 medium zucchini (approx. 450g)
- 1/2 tsp fine sea salt
- 1/4 cup finely grated Parmesan cheese (25g)
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp freshly cracked black pepper
- 1 tbsp extra virgin olive oil
Instructions:
- Slice the zucchini into uniform 1/4-inch rounds. Place them on paper towels and sprinkle with sea salt. Let sit for 10 minutes to draw out moisture, then blot firmly with another paper towel until dry.
- In a large mixing bowl, whisk together the finely grated Parmesan cheese, garlic powder, smoked paprika, and black pepper.
- Drizzle the dried zucchini slices with olive oil and toss to coat lightly. Add the Parmesan mixture and toss gently until each slice has an even, velvety coating.
- Preheat air fryer to 400°F (200°C). Arrange zucchini slices in a single layer in the basket, ensuring they do not overlap.
- Air fry for 8-10 minutes, shaking the basket halfway through. Remove when the edges are mahogany-colored and the cheese is crisp.
