Ingredients:

  • 2 medium zucchini (approx. 450g)
  • 1/2 tsp fine sea salt
  • 1/4 cup finely grated Parmesan cheese (25g)
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp freshly cracked black pepper
  • 1 tbsp extra virgin olive oil

Instructions:

  1. Slice the zucchini into uniform 1/4-inch rounds. Place them on paper towels and sprinkle with sea salt. Let sit for 10 minutes to draw out moisture, then blot firmly with another paper towel until dry.
  2. In a large mixing bowl, whisk together the finely grated Parmesan cheese, garlic powder, smoked paprika, and black pepper.
  3. Drizzle the dried zucchini slices with olive oil and toss to coat lightly. Add the Parmesan mixture and toss gently until each slice has an even, velvety coating.
  4. Preheat air fryer to 400°F (200°C). Arrange zucchini slices in a single layer in the basket, ensuring they do not overlap.
  5. Air fry for 8-10 minutes, shaking the basket halfway through. Remove when the edges are mahogany-colored and the cheese is crisp.
