Ingredients:
- 1 cup (125g) White Whole Wheat Flour
- 1 cup (240ml) Water
- 2 tbsp (28g) Coconut Oil
- 1 tbsp (15ml) Maple Syrup
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
- 1 Large Egg, room temperature
- 3 tbsp (36g) Coconut Sugar
- 1 tbsp Ground Cinnamon
- 1 tsp Melted Coconut Oil
Instructions:
- Combine the 1 cup water, 2 tbsp coconut oil, 1 tbsp maple syrup, and 1/4 tsp salt in a medium saucepan. Heat until it reaches a rolling boil.
- Turn the heat to low and dump in the 1 cup white whole wheat flour all at once. Stir vigorously with a wooden spoon until a ball forms.
- Remove from heat and let it sit for 3 to 5 minutes. Ensure it's warm but not hot enough to scramble an egg.
- Add the 1 tsp vanilla and the room temperature egg. Stir until the dough is smooth and glossy.
- Fit your piping bag with a star tip and transfer the dough into it. Push the dough toward the tip to remove air pockets.
- Grease the air fryer basket with a tiny bit of coconut oil. Pipe 1 inch segments and snip them with shears into the basket.
- Set your fryer to 375°F. Cook for 10 minutes until the exterior is golden and feels firm to the touch.
- While they cook, mix the 3 tbsp coconut sugar and 1 tbsp cinnamon in a bowl. Brush the hot bites with 1 tsp melted coconut oil and roll in the sugar mixture.
