Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- ½ cup (60g) all-purpose flour
- 2 large eggs, beaten
- 1 cup (100g) Italian breadcrumbs
- ¼ cup (30g) grated Parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- 1 ½ cups (355ml) marinara sauce
- 8 ounces (225g) fresh mozzarella cheese, sliced
- ¼ cup (30g) grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
Instructions:
- Pound chicken breasts to an even thickness (about ½ inch).
- In separate shallow dishes, place the flour, beaten eggs, and breadcrumb mixture (breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper).
- Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with the breadcrumb mixture.
- Preheat your air fryer to 375°F (190°C).
- Lightly brush the air fryer basket with olive oil. Place breaded chicken breasts in the air fryer basket in a single layer (cook in batches if necessary). Drizzle the tops of the chicken with the remaining olive oil. Air fry for 8-10 minutes, then flip and cook for another 7-8 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Top each chicken breast with marinara sauce, mozzarella slices, and Parmesan cheese.
- Return the chicken to the air fryer and cook for 1-2 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil (if desired) and serve immediately.
