Ingredients:

  • 1 cup (240ml) Heavy Cream (35% fat or higher), cold
  • 4 tablespoons (60ml) Sour Cream, cold

Instructions:

  1. In a cold mixing bowl, add the heavy cream and sour cream.
  2. Using an electric mixer, begin whipping on medium speed.
  3. Gradually increase the speed to high.
  4. Continue whipping until the mixture thickens and soft peaks form, resembling clotted cream. This should take approximately 2-3 minutes, but watch it closely – it can go from perfect to over-whipped quickly. You're looking for that telltale clotted texture.
  5. Serve immediately or chill for a short time to firm up slightly.
