- 4 tablespoons (60ml) Sour Cream, cold
Instructions:
- In a cold mixing bowl, add the heavy cream and sour cream.
- Using an electric mixer, begin whipping on medium speed.
- Gradually increase the speed to high.
- Continue whipping until the mixture thickens and soft peaks form, resembling clotted cream. This should take approximately 2-3 minutes, but watch it closely – it can go from perfect to over-whipped quickly. You're looking for that telltale clotted texture.
- Serve immediately or chill for a short time to firm up slightly.
