Ingredients:
- 4 (approx. 4–6 oz) Tilapia Fillets
- 1 Tbsp Extra Virgin Olive Oil (for coating the pan)
- 1/4 cup Extra Virgin Olive Oil
- 2 large cloves Garlic, finely minced
- 1 Tbsp Fresh Lemon Zest
- 3 Tbsp Fresh Parsley, finely chopped
- 1 Tbsp Fresh Thyme, leaves picked
- 1/2 tsp Smoked Paprika (optional)
- 1/2 tsp Kosher Salt
- 1/4 tsp Freshly Ground Black Pepper
- 1/2 medium Lemon, thinly sliced (for baking)
- 2 Tbsp Fresh Lemon Juice (for serving)
Instructions:
- Preheat oven to 400°F (200°C). Line a 9x13 inch baking sheet with parchment paper or foil and lightly brush with 1 Tbsp of olive oil. Remove the tilapia fillets from the packaging and thoroughly pat dry with paper towels.
- In a small mixing bowl, whisk together the 1/4 cup olive oil, minced garlic, lemon zest, parsley, thyme, paprika, salt, and pepper. Adjust seasoning to taste.
- Place the dried tilapia fillets onto the prepared baking sheet. Spoon or brush the lemon-herb dressing evenly over the top and sides of each fillet. Place two to three thin lemon slices directly on top of each fillet.
- Bake for 15 to 18 minutes, or until the fish is opaque throughout and easily flakes when pierced gently with a fork (internal temperature should reach 145°F / 63°C).
- Remove the fish from the oven and let it rest on the tray for 2 minutes. Drizzle the fresh lemon juice over the fillets just before serving.
