Ingredients:
- 2 cups (200g) Rolled Oats (Old-Fashioned, not quick-cooking)
- 1 cup (100g) Unsweetened Shredded Coconut
- ½ cup (60g) Chopped Nuts (Almonds, Pecans, or Walnuts)
- ½ cup (85g) Mini Chocolate Chips
- ¼ cup (30g) Chia Seeds or Flaxseed Meal
- ½ teaspoon (2g) Sea Salt
- ½ cup (120ml) Honey or Maple Syrup
- ½ cup (120g) Natural Peanut Butter (smooth or crunchy)
- 2 tablespoons (30ml) Coconut Oil, melted
- 1 teaspoon (5ml) Vanilla Extract
Instructions:
- Preheat oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, combine rolled oats, shredded coconut, chopped nuts, chocolate chips, chia seeds/flaxseed meal, and salt.
- In a separate bowl, combine honey/maple syrup, peanut butter, melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix thoroughly until everything is evenly coated.
- Transfer the mixture to the prepared pan and press firmly and evenly.
- Bake for 20-25 minutes, or until golden brown around the edges.
- Let cool completely in the pan before lifting out with the parchment paper overhang. Cut into bars.
