Ingredients:

  • 2 cups (200g) Rolled Oats (Old-Fashioned, not quick-cooking)
  • 1 cup (100g) Unsweetened Shredded Coconut
  • ½ cup (60g) Chopped Nuts (Almonds, Pecans, or Walnuts)
  • ½ cup (85g) Mini Chocolate Chips
  • ¼ cup (30g) Chia Seeds or Flaxseed Meal
  • ½ teaspoon (2g) Sea Salt
  • ½ cup (120ml) Honey or Maple Syrup
  • ½ cup (120g) Natural Peanut Butter (smooth or crunchy)
  • 2 tablespoons (30ml) Coconut Oil, melted
  • 1 teaspoon (5ml) Vanilla Extract

Instructions:

  1. Preheat oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, shredded coconut, chopped nuts, chocolate chips, chia seeds/flaxseed meal, and salt.
  3. In a separate bowl, combine honey/maple syrup, peanut butter, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and mix thoroughly until everything is evenly coated.
  5. Transfer the mixture to the prepared pan and press firmly and evenly.
  6. Bake for 20-25 minutes, or until golden brown around the edges.
  7. Let cool completely in the pan before lifting out with the parchment paper overhang. Cut into bars.
